Southern Cornbread
1 cup yellow cornmeal
1 cup all purpose flour
¼ cup granulated sugar
1 tsp salt
3 tsp baking powder
¼ tsp cream of tartar
½ cup Egg Beaters®
¼ cup butter flavor vegetable shortening
1 oz fat free cream cheese
1 1.4 cup skim milk
Preheat oven to 425 degrees. Place
an 8"x8" glass baking dish with 1 tbsp
vegetable oil in the bottom in the oven. Place all
dry ingredients in a medium mixing bowl. Add shortening,
cream cheese, egg substitute an milk in bowl. Using
an electric hand mixer beat for 2 minutes, scraping
bowl often. Take glass dish from oven and pour in
cornbread batter. Place back in oven and bake for
12 minutes, turn oven down to 350 degrees and bake
for another 10 minutes. Test center with knife,
it should come out clean. Remove from oven. Allow
to cool for 5 minutes and serve.
